Choose a garnish with a purpose

Garnish can add aroma, texture or a flavour cue; it does not need to be elaborate.

Step by step

  1. Wash fruit and herbs and use clean tools.
  2. Choose citrus peel for aroma, a wedge when extra juice is welcome, or a fresh herb that fits the drink.
  3. For peel, cut a small strip with little white pith and squeeze its coloured side towards the drink.
  4. Keep garnishes clear of the rim where they make drinking awkward.

Common mistake

A large squeezed wedge changes acidity. Do not add one automatically to a carefully balanced stirred drink.

Try it

Smell a drink before and after expressing orange peel. Taste without squeezing fruit juice into it.
