When and how to double strain

A second, fine strainer catches fragments that the main cocktail strainer lets through.

Step by step

  1. Prepare a chilled serving glass.
  2. Fit your main strainer to the mixing vessel or use the shaker's built-in strainer.
  3. Hold a small fine-mesh strainer above the glass and pour through both strainers.
  4. Let the last liquid drain without forcing crushed fruit through the mesh.

Common mistake

Double straining will not remove dissolved ingredients or magically clarify juice. It is a texture choice, not a requirement for every cocktail.

Try it

Compare a citrus drink strained once and twice. Look for floating ice chips and compare the mouthfeel.
